For those of you with very little time, this recipe has always been a quick and easy fallback.
So, here goes. Recipe numero due:
LEMON AND GARLIC (STEAMED) CHICKEN
Ingredients: 2-3 boneless/skinless chicken breasts, 1/2 to 1 whole lemon, ~1 tablespoon olive oil, ~2-3 teaspoons (powdered or fresh minced) garlic [optional: sea salt and/or garnish]
Preparation: Place the chicken breasts (or cutlets if you prefer to cut them up) in your steamer of choice. Steam until desired doneness (based on portion size) and plate. Squeeze fresh lemon over the chicken, add a very light drizzle of olive oil, coat each breast (or breast-sized portion of cutlets) with ~1 teaspoon of garlic and, voila, you’re done. Add a slight sprinkle of sea salt (if desired).
For an extra bit of appeal, chop up a bit of cilantro to embolden the taste and to add color.
